Banana Muffins

Banana Muffins Paleo, grain free, gluten free, cakes, banana, baking, baking mix, muffin
Makes: 3 large or 6 small

 

 
Ingredients:

 

250g (2 cups) LLWF Baking Mix

1 tsp ground cinnamon

1 ripe banana

2 tbs soft butter or coconut oil

2 eggs (vegan - tbs ground flaxseed soaked in 4 tbs warm water for 15 minutes)

Optional: 5 pitted dates ro 2 tbs honey or maple syrup if you are a real sweet tooth! 

Preparation:

 

  1. Preheat oven to 180 degrees celcius and grease or line a muffin pan with patty cake liners.

  2. Add the baking mix and cinnamon to a large mixing bowl and stir to mix in the cinnamon.

  3. Add the banana, oil, eggs and dates or honey if using to a blender and blend until smooth

  4. Add the blended banana mix to the mixing bowl with the baking mix and cinnamon and fold through gently until just combined.

  5. Spoon into prepared muffin pan and bake for 20-25 minutes or until they bounce back when gently pressed.

  6. Enjoy
