Banana & Mango Fruit Muffins

Banana, Mango, Fruit Muffins
Makes: 12
 
Ingredients:

 

1 ½ cup LLWF Baking Mix

1 cup diced mango – frozen or fresh

2 ripe banana

½ cup sliced pitted date or sultanas

½ cup chopped almonds or pepitas

½ cup dried coconut

1 tsp vanilla paste

50 ml coconut or other neutral oil

2 eggs

2 capfuls apple cider vinegar

 

 

Preparation:

 

  1. Preheat oven to 180oc and grease or line a muffin pan with patty cake liners.

  2. Add the self raising flour to a large mixing bowl

  3. Add the rest of the ingredients to a blender and gently blend to break up the egg. You could also add all of the ingredients to a small bowl then grate the banana in to mash then stir through.  

  4. Add the blended banana mix to the mixing bowl and fold through gently until just combined.

  5. Spoon into the muffin pan and bake for 20-25 minutes or until they bounce back when gently pressed.
