Banana Muffins with Matcha Streusel 

Apple and Cinnamon with Fruity Streusel

Ingredients:

 

Muffins:

​

1 cup Luving Life Wholefoods Self Raising Flour

1 cup rolled oats ground into flour/meal

1/2 cup Natvia or Sugarless Stevia organic or

Raw Earth Stevia and Monk fruit

(all available at Woolworths in Australia)

1 large ripe banana

3/4 cup nut milk

1 tsp vanilla extract

2 squirts Nirvana Vanilla liquid stevia or vanilla extract

2 orgran No eggs or 2 flax eggs

1/2 cup coconut oil or Nuttalex

 

Streusel Topping:

 

3 tbs rolled oats

3 tbs dried coconut

1/2 tbs matcha (I love Zen Green Tea)

3 tbs natural sultanas

3 tbs sweetener (as above)

Zest from 1/2 lemon

1 tbs coconut oil or nuttalex

1 tbs rice syrup

Preparation:

Muffins:

​

  1. Preheat oven the 180 degrees Celsius and grease a 12 muffins pan. 

  2. Make the no egg by adding 2 tbs of the mix/ground flax with 4 tbs water, stir thoroughly to combine then let it sit for a few minutes. 

  3. Add self raising flour and sweetener to a large mixing bowl and stir.

  4. Add the banana, milk, vanilla, vanilla stevia if using, no eggs and oil and blend until smooth and creamy. 

  5. Add the banana mix to the dry mix and fold through gently until just combined. 

  6. Spoon into muffins pan and bake for approximately 10 minute the quickly remove and add the streusel, return to the oven and bake for another 7-10 minutes or until lightly browned and they spring back when gently pressed. 

  7. Take them out of the oven, then allow to cool for about 15 minutes before gently prying them our of the muffins pan. 

 

Streusel:

 

  1. Add all ingedients to the same bowl you made the muffins in (don't bother to clean it. The left overs adds to the flavour and texture) and mix in with your fingertips until it creates a crumbly but sticky mixture that is well combined. 

  2. Gently add dollops onto the centre of the muffins at the half way mark as instructed above.

NOTES & TIPS:

 

  • I've used both Sugarless Stevia Organic and Raw Earth Sweetener Co Stevia & Monk Fruit and both work perfectly and taste great.  

  • If you are not vegan that 2 eggs would work fine.  

  • Butter and milk can be used if dairy free is not important to you. 

  • To make them grain free use Quinoa flakes instead of the oats, The texture in the muffins may be a little bit different but they should still be nice.
