Carrot Cake Balls

The traditional Carrot Cake made into yummy Blissballs, amazeballs, yumballs, protein balls! Call them what you like they're quick and easy and everyone will love themEspecially your top drawer at work! ;-)

Makes: about 18 balls

Ingredients:

​

2 medium carrots - sliced

1 cup rolled oats

1 cup sultanas 

2 tbs stevia monk fruit sweetener or xylitol or erythritol

1 tbs peanut butter or tahini

1 tbs coconut oil

1 tsp chia seeds

1/2 tsp vanilla extract

1/2 tsp ground cinnamon

Optional: 1 tbs vanilla pea protein powder

Carrot Cake Protein Balls
Preparation:

 

  1. Blend carrots, sultanas, oats, sweetener until fine then add the remaining ingredients and blend until fine and sticky then shape into balls and roll in coconut. 

  2. Most of all... enjoy 💞

NOTES:

 

  • If you want them all to be free from grains then use more nuts or for a lighter version you can substitute Quinoa flakes. 

  • Balls store well in a container in the fridge. 

  • If the mix seems too thin and runny add more oats or protein powder in small amount. Eg 1 tbs at a time.
