Sweet Potato Waffles

These savoury waffles are super delicious and naturally free from grains, gluten and animal products making them a very healthy substitute for bread. If you don't have a waffle maker then you could shape and bake them in the oven or cook them as you would pancakes, but make sure to keep the heat of your frypan on low to medium so that they are able to cook through to the centre without burning on the outside. 
I serve ours smothered in avocado, grilled mushrooms, eggplant (because we have so much growing in the garden) tomatoes, fresh greens and a sprinkle of balsamic glaze and Dukkah.

Ingredients:

1 medium sweet potato - grated

1/2 cup LSA (Linseed, sunflower, almond mix - ground)

1 tsp Italian herbs mix

1/2 tsp stock powder

Salt and pepper to taste

1/2 tsp onion powder 

1/2 tsp garlic powder

2 tbs extra virgin olive oil

Apple and Cinnamon with Fruity Streusel
Preparation:

 

  1. Mix all ingredients together in a mixing bowl and allow to stand for 10-15 minutes

  2. Cook in a waffle iron as per manufacturers instructions

  3. Enjoy 💞

NOTES:

 

  • My favourite stock powder is the Massel brand. The chicken flavour is vegan, it's a bit discerning but if you check the ingredient there are no animals products in it.
