Vegan Spinach & Cheese, Falafel Sausage Rolls

These quick and fairly easy Sausage rolls not only vegan they are one of our favourite snack time treats for special occasions, and sometimes even more that that! ;-) I use a box of Falafel mix as it adds not only flavour and protein it also add to the structure of the sausage mix ensuring that they always work out. The rest of the ingredients are items that you would usually have in your pantry and if not I have suggested a few good substitutes.

Ingredients:

4 sheets puff pastry 

200 g Falafel mix*

1 cup rolled oats

1 cup walnuts

1/3 cup onion

1-1 1/2 cups mixed frozen veggies

2 tbs chia seeds

2-3 tbs stock powder ( I used chicken*)

1 tbs Italian or mixed herbs

1 tsp garlic paste or 1/2 tsp garlic granules

3 tbs tomato paste

3 tbs tamari

2 tbs rice syrup or 1-1 1/2 tbs maples syrup

1 1/2 to 2 cups water

Preparation:

 

  1. Pre heat oven to 180℃ and grease or line a baking tray with non stick baking paper.

  2. Lay 4 sheets puff pastry out to defrost while you prepare the filling

  3. Turn the falafel mix into a large mixing bowl

  4. Add the oats and walnuts to blender and blend until they are a fine meal, don’t over do it, it’s better that they are under done and a bit coarse than overdone and mushy, then add to the falafel mix

  5. Add the onion and veggies to the blender and blend until chopped finely then add to the bowl with the falafel mix and oats. 

  6. Add the stock powder, herbs, garlic, tomato paste, tamari, syrup and 1 1/2 cups of water to the bowl then stir to combine. 

  7. The mix needs to a bit soft as it twill firm up so add more water if needed. It will also depend on the type of veggies you used as some contain more water than others. 

  8. Allow the mixture to sit for about 5-10 minutes to thicken

  9. Using a spoon and your fingers create a long sausage along each half of the pastry then slice down then centre roll them up making sure that puff pastry overlaps on the bottom.  

  10. Slice each long sausage roll in half (for large sausage rolls) or quarters (for party sausage rolls) and spread evenly onto the baking tray. 

  11. Continue until you have used up all of the mix. 

  12. Bake in the centre of the oven for approximately 30-40 minutes depending on your oven or until lightly browned and crisp on the outside and cooked throughout. 

  13. allow to cool for 5-10 minutes before enjoying with a good homemade Tomato Sauce 😉👍🏻❤️

 

NOTES:

 

  • I use the Borg's Traditional Puff Pastry available at Woolworths)

  • If you're vegan just make sure that it is free of animal products, so look for dairy free etc, no butter. 

  • I use Massel stock powders as they are the easiest and usually best option available from supermarkets, also note that the chicken stock does not contain chicken at all. 

  • If the mix ends up too soft add 1-2 tbs ground oats and 1tsp stock powder or to taste. Don't be deceived though as it also firms up when it's baked. 

  • You can freeze uncooked sausage rolls then place into a pre-heated oven and bake for 30-40 minutes depending on your oven or until lightly browned and crisp on top. 

  • If you have an air-fryer they cook up perfectly in it and only take 15-16 minutes at 180℃
