Anzac Biscuits/Cookies - Paleo & Sugar free

Makes: 3 large or 6 small




1 cup LLWF Self Raising Flour

¾ cup xylitol

1 cup shredded coconut

1 cup quinoa flakes

¼ cup coconut oil

¼ cup rice syrup

approx. 3 tbs water


Apple and Cinnamon with Fruity Streusel


  1. Preheat oven to 180 degree Celcius and line or grease 2 large baking pans

  2. Mix together the flour, sugar, coconut and quinoa flakes in an large bowl

  3. Add the melted coconut oil, syrup and water then stir until it turns into a thick pasty mixture that holds together when pressed into a ball.

  4. Place rounded tablespoons onto the baking tray about 4 cm apart until you have used all of the mix

  5. Flatten the tops with the back of a damp fork then bake for 15-18 minutes or until slightly browned.

  6. Remove from the oven, once they have cooled they will harden.

  7. Store in an airtight container to retains freshness and crispness. For extra crunch they are best stored in the fridge.
