I can honestly say, this cake it pretty quick and easy to make. You just need a well stocked pantry and you'll have a great dessert or tea time cake ready to please a small crowd in no time at all.

The first time I made this cake was a few months ago for one of our rockstars staff, Jess. Her comment was "My favourite so far" so I made sure to store that comment in my memory for when her birthday came up. Lucky I did as it was her birthday last Thursday and after a few minutes of racking my brain for inspiration I remembered what she said.

Then I started to search for the recipe. I (always) usually write recipes down somewhere if I get a good reaction to them. I was sure this one was on my computer somewhere. But it wasn't! So I racked my tiny little brain again and found my inspiration and went about healthifying it, as I do. Thankfully it came out just as good. So without further ado, here is the recipe
