Chickpea Nuggets
Grab that can of chickpeas you have in the pantry and make these now!! They're a great snack and easy to prepare.
I love to serve these as an entrée or afternoon snack served with my sugar free Tomato Sauce. Just sub xylitol or erythritol for the coconut sugar in my recipe and you’ll never need to buy tomato sauce again. They're nice an crisp on the outside and sort and firm but soft on the inside.. Oxymoron I know, but I'm sure you know what I mean. They're not soft and gooey and they're not hard. They're just right.
Chickpea's are a great meat alternative, they're nutritious, a good source of protein, fat free, help stabilise blood sugar making then great for diabetics and they're cheap. Not only that but did you know that the liquid from cooked or canned chickpeas has become extremely popular of late in the plant based and vegan community. It's a great egg white substitute. I’ve used it in a few of my recipe and the results have been great. Like my Chocolate Fudge Muffins , Almond Anzac Waffles and Chocolate Walnut Cake.. all are vegan and gluten free.
